chore(release): aimock-pytest v0.7.1 (#589)

Bumps the `aimock-pytest` Python package from 0.7.0 to 0.7.1. This is
the Python package's own version series and is unrelated to the
`@copilotkit/aimock` npm server version (1.47.0).

## Why
The v1.47.0 release (#588) moved the `AIMOCK_VERSION` pin to 1.47.0 but
left `pyproject.toml` at 0.7.0. The Release workflow found 0.7.0 already
on PyPI and skipped the upload, so PyPI users still download the 1.45.0
server by default.

## Changes
- `packages/aimock-pytest/pyproject.toml`: `[project]` version 0.7.0 to
0.7.1 (dependencies and the `AIMOCK_VERSION` pin untouched).
- `CHANGELOG.md`: adds a `### Changed` note under `[Unreleased]`:
`aimock-pytest` 0.7.1 now defaults to `@copilotkit/aimock` 1.47.0.

## Ordering
The "defaults to 1.47.0" claim already holds on `main`: `_version.py`
pins `AIMOCK_VERSION = "1.47.0"` (from #588, merged), and
`@copilotkit/aimock@1.47.0` is on npm. On merge, the Release workflow
skips npm (1.47.0 already published) and `publish-pytest` uploads 0.7.1.

## Local checks
- `pytest tests/` against the local 1.47.0 build: 251 passed (exit 0)
- `hatchling build`: sdist + wheel `aimock_pytest-0.7.1` (exit 0)
- `prettier --check CHANGELOG.md`: exit 0
