Summary

Updates the Carbone entry for v2.1.1 of the server. The hosted server at https://mcp.carbone.io is now generally available, and users sign in with their Carbone account (OAuth 2.1).

• Added the OAuth 2.1 scheme (PKCE, dynamic client registration, scope doc_rwd) and authSchemas: ["OAuth2"].
• Removed the API-key scheme. API keys now only apply to self-hosted instances, documented under the npm package.
• Set x-ms-preview to false.
• Refreshed the description, tags and npm environment variables to match v2.1.1.

Validation

• Validates against partners/server-schema.json.
• The OAuth values match the live metadata at https://mcp.carbone.io/.well-known/oauth-protected-resource
• Tested with Azure AI Foundry: OAuth sign-in works and all tools are callable.
