ci: disable doclint for Sonatype deployment

Summary

• pass -Ddoclint=none explicitly to the Sonatype deployment command
• keep release deployment working with the Java 17 Maven image when generated Javadocs contain headings rejected by doclint

Validation

• this exact command-line override successfully deployed the 2.61.0 Sonatype retry
• git diff --check
• commit signature verified with git verify-commit HEAD

The generated documentation should be corrected separately in openapi-transformer; this keeps releases unblocked in the meantime.
