[DNM] Assistants Don't Assist No More — Renames Assistant to Off-Duty Crew

Do not merge until after #1241.

This PR renames assistant to Off-Duty Crew and renames a few items that were named off of assistants into more fitting, lore-accurate names by extension. This also removes a few quite redundant alt titles (Tourist, Guest, Off-Duty Staff) to reduce bloat.

Why It's Good For The Game

Following #1241, Roustabouts are in, whose central purpose was to have a departmentless job with a clear intention to be the everyman's worker. There's more of a reason, now, to make the separation between who's there off-duty and who's there on-duty, so the freaks that are lollygagging about are not confused for the freaks that are there to get hands-on with their work.
