docs: refresh package status and fix the composable Turing models approach example - #25

Promote ComposableTuringIDModels and ComposedDistributions to maturing (both are registered and installable on their 0.x lines), add the missing ReparameterisedDistributions entry (registered 0.2.0, maturing), and note convolve_series on CensoredDistributions.

The prior snippet used the removed IDData wrapper, the old Renewal(data; ...) / initialisation_prior keywords, and HierarchicalNormal std_prior=. Rewrite to the current API (generation_time, initialisation, std=, Mooncake AD) and verify it builds, samples from the prior, and runs a real NUTS+Mooncake fit against the registered release.

Refreshes the packages page and the approaches' example code to match where the packages actually sit and their current APIs.
Package status (
packages/index.qmd) — follows the site's own definitions: maturing = registered and installable on a 0.x line.convolve_seriesfor censored-delay series.Approach example (
approaches/composable-turing-models.qmd) — the prior snippet was stale and did not run against the current release (removedIDDatawrapper, oldRenewal(data; ...)/initialisation_priorkeywords,std_prior=). Rewritten to the current API and verified against the registered release: model builds, samples from the prior, and a real NUTS+Mooncake fit runs end-to-end. The composed-distributions example was checked and already valid.
