docs: update site logo to new EpiAware design system icon - #30

The PR swaps the hand-authored logo.svg for a new hexagon/DAG design, replacing the old algorithmically-generated mixture-density mark. The change itself renders fine, but assets/logo/make_logo.jl (which the repo's own header comment says generates this exact file) was not touched, so running it per its documented instructions would silently overwrite the new logo with the old one — that drift isn't caught by CI and should be resolved by deleting/updating the generator or documenting that the SVG is now hand-maintained.

suggestion The old file had both <title> and , the new one drops . Add a one-line describing the new mark (e.g. "A composable model graph feeding an ensemble of forecast trajectories.") for when the SVG is read outside the wrapper, such as the favicon.

note width="64" height="64" were dropped, leaving only viewBox. Current usages size it via CSS so this likely renders fine, but consider restoring explicit width/height (e.g. width="400" height="420") since this file is also used directly as the site favicon.
