The macos-latest runner is on an Apple Silicon machine (macos-26-arm64). Because the matrix requests x64, setup-julia installs x64 Julia and runs it under Rosetta.

Since Metal 1.12.0 was released, the Julia 1.10 / macOS / x64 job crashes while precompiling Metal, at using Metal in test/runtests.jl, before any test runs:

JIT session error: Symbols not found: [ ___dso_handle ]
    signal (11.1): Segmentation fault: 11
    in expression starting at .../Metal/src/Metal.jl:20

Metal.jl supports only Apple Silicon anyway, so the x64 macOS job never exercised the Metal extension. This PR runs the macOS jobs on aarch64 and keeps Ubuntu on x64.
