Default QdrantCluster image to Qdrant v1.19.2 - #15

New clusters that omit spec.image.tag now run the current Qdrant
release instead of v1.18.2. The CRD default, the chart CRD bundle and
the four READMEs move together; doc drift checks the READMEs.
The REST client was exercised against qdrant/qdrant:v1.19.2 in cluster
mode: create, GET /cluster, GET /collections/{c}/cluster, upsert,
scroll, collection info, aliases, snapshot create/list/delete and
delete all decode as before, so the schema bound at v1.18.2 holds.
Tests and the parity golden that set a tag explicitly keep v1.18.2:
they pin inputs, not the default, and the golden is a captured render
of the upstream chart at that version.

Local: make test, make lint, doc-drift, chart-crds-check, publish-scan, helm lint green. Live smoke ran as a throwaway test (not committed) against qdrant v1.19.2 (sha256:b7b0444c…).
