fix(deps): pin grpc to v1.83.2 (GO-2026-6443) - #342

The Go vulndb lists grpc v1.84.0 as affected by GO-2026-6443; the only fix on that line is an unreleased 1.85.0-dev. v1.83.2 is outside every affected range and still above the floors for the earlier grpc CVEs (1.82.2 / 1.83.1). Nothing in the graph requires 1.84.0, so tidy keeps 1.83.2; otel stays at 1.45.0. govulncheck: no findings in called or imported code. trivy fs: only GO-2026-5932 (x/crypto/openpgp unmaintained, no fix) remains. Follow-up security release: 1.5.3 shipped grpc v1.84.0, which the Go vulndb lists under GO-2026-6443. #342 pins grpc v1.83.2. Chart version/appVersion 1.5.4, operator image entry 1.5.4, and artifacthub.io/changes leading with the grpc pin (1.5.3 entries carried so ArtifactHub shows the full delta from 1.5.2).
