This PR runs the test workflow on Python 3.15 as well as 3.13, on Linux, macOS and Windows. The job names now include the Python version.

All 6 jobs pass on my fork: https://github.com/pylaterreur/pyreadstat/actions/runs/39591596246. The 3.15 jobs run CPython 3.15.0, and every test step passes on each OS:

Step Tests
test_basic 94
test_narwhalified, pandas 107
test_narwhalified, polars 107
test_http_integration 1
test_runtime_types 12
test_typing 50

pyreadstat needs no code change for 3.15: the extensions build with Cython 3.3.0 against the 3.15.0 headers with no warnings from gcc -Wall.

I kept 3.13 and only added 3.15. If you want the whole supported range tested, 3.10 and 3.14 can go in the same list.

The cp315 wheels themselves are built in pyreadstat_wheels5. The issue has the change needed there and a run that builds and tests all of them.

Thanks, but no need to add 3.15 here. The intention of this pipeline is to build quickly in one single python version on three major platforms to catch quickly any gross cross-platform error, not to be exhaustive on all possibilities, for that pyreadstat_wheels5 should be used.
