Server Not Updating

Minecraft has been updated to 1.21.9 but on reboot my server will not update so I am stuck on 1.21.7

How do I update please?

Hi, maybe you have set an environment variable for Version 1.21.7?

When I installed it I used

docker run -it -v NewWorld:/minecraft -p 25565:25565 -p 19132:19132/udp -p 19132:19132 -e Version=1.21.7 --restart unless-stopped 05jchambers/legendary-minecraft-geyser-floodgate:latest

I do not want to reinstall everything I have a nice world set up!

Can I somehow change the Version Number on my current instal??
