CI: test on PHP 8.5, update actions/checkout to v7 - #37

PHP 8.5 is the current stable release, and the tests and phpcs pass on it. actions/checkout@v4 runs on Node 20, which GitHub Actions deprecates.

A small CI update:
actions/checkoutv4 → v7. v4 runs on Node 20, which GitHub Actions has deprecated.The older PHP versions (7.2–8.4) stay in the matrix.
This pull request was prepared with the help of an LLM (Claude Code). The workflow was checked with
actionlint, and the steps of the new matrix entry were run in thephp:8.5Docker image. Please take a look before merging anyway.
