We are building some system on top of Daft using Lance, and we are missing interesting stats about the lance io, wiring up some stats in this PR.
Connect with this PR in Daft, that makes the stats a public api: Eventual-Inc/Daft#7497
For iceberg, or directly working with data files like parquet, the stats are already flowing, this PR makes the lance support up to the rest
