Remove ClickHouse references from the English and Chinese documentation so the documented storage backends no longer include it.

• Update the database lists on both homepages and in binary deployment prerequisites, including minimum-version tables.
• Remove the ClickHouse configuration tab, connection examples, and driver documentation link.
• Remove CLICKHOUSE_URI from the contribution guides.

Validation:

• Repository-wide case-insensitive search confirms there are no remaining ClickHouse references or chhttp/chhttps connection examples.
• git diff --check passes.
• VuePress production build passes (./node_modules/.bin/vuepress-vite build src).
