feat: improve setup interface and add new 2026 apps

This PR addresses the user's request to "Improve interface and add more usefull 2026 apps".

1. Interface Improvements:
   • Fixed missing line continuations (\) in the gum choose configuration block that was causing shell parsing errors.
   • Handled the MOD_DESC associative array by converting commas to slashes, mitigating a bug where gum choose --selected would split selection arguments improperly due to comma delimiters.
2. New Apps Added: Added several modern, useful apps per the prompt: cosign (container signing), bob (Neovim version manager), nvtop (GPU monitor), alacritty (GPU-accelerated terminal), and insomnia (REST API client). Also created their respective standalone module configuration scripts.
3. Refactoring: Improved the lazysql script to utilize the go_helper.sh utility correctly.

No blocking issues remain. Temporary scripts were all removed before submission.
