Add an optional Matroska track number to HevcProcessorOpts.
When a track number is specified, the matching HEVC video track is selected.
When no track is specified, the existing track selection behavior remains unchanged.
This allows callers such as dovi_tool's extract-rpu command to select a specific HEVC track from multi-track Matroska files.
