chore: dep update + ensure iroh 1.0 is backwards compatible with 0.94

Updating to iroh 1.0.0 from 0.94.0. It appears to be backwards compatible, both 0.94 client --> 1.0 server and 1.0 client --> 0.94 server works (tested on only ubuntu so far).

Todo's:

• check all directions on all OS's (mac 0.94 --> win 1.0, win 0.94 --> mac 1.0, ...) for mac, win and lin
• update relay guide https://github.com/rustonbsd/iroh-ssh/blob/main/CUSTOM_RELAY.md
• version bump
