The star history chart was broken due to restrictions on the GitHub stargazer API. Point the chart to a working mirror so it renders correctly again, in both the English and Chinese READMEs.

The star history chart in the README is currently broken because the underlying GitHub stargazer API is restricted, so the chart no longer renders for visitors. This PR switches the chart to a working mirror that uses a different data source requiring no API token, so the chart is displayed correctly again.
Also updates the Chinese README to keep both versions in sync.
